Description

Perfect with tea and coffee. A recipe that's simple, quick, and very delicious. The sorrel must be completely dry, otherwise the bottom layer will remain soggy due to excess moisture. It's best to prepare the sorrel the night before, so in the morning it'll be ready. Take the eggs out ahead of time so they reach room temperature—this way the batter will whip up better. Serve cooled or slightly warm.

    Sort through the fresh sorrel, remove the stems, herbs, and spoiled leaves. Wash the sorrel thoroughly, shake off the water, and spread it out in a single layer on a towel. Let the sorrel dry completely.
