
Charlotte Cake with Rhubarb
Description
The pastries are prepared simply and quickly. Rhubarb Charlotte can be made in two ways: mix chunks of rhubarb into the batter, or arrange them on the bottom of the pan and pour the batter over top. Choose the method you prefer. It can be served with tea or coffee.

Prepare the necessary ingredients.

In a bowl, combine the eggs and sugar.

Beat until light and fluffy. Add kefir. Beat.

Add the flour, cinnamon, and baking powder. Mix well with a mixer until smooth and even.

The dough should be thick and airy.

Cut the rhubarb into 3–5 cm pieces. Add to the batter and mix until combined.

Line a baking pan with parchment paper. Pour the batter into the pan. Place the pan in an oven preheated to 180°C and bake for 40–45 minutes. Allow for differences in how your oven bakes.

After the time is up, check the rhubarb Charlotte for doneness with a wooden skewer. It should come out dry.
