
Charlotte with dried apricots
Description
The recipe won't take much time. This is a very unique version: a charlotte with dried apricots and topped with a meringue layer. The presence of such original ingredients makes it much more appetizing. Dried apricots, which you can replace with prunes or raisins if desired, greatly enrich the flavor. This cake is perfect for entertaining guests, celebrating a small occasion with colleagues, or simply enjoying a cozy family tea time. The baked good is ready. Serve it at the table.

1. Rinse the dried apricots beforehand and pour hot water over them. Leave them in the water for 10–15 minutes. They should swell and become soft.

2. First, take a bowl and crack three eggs into it. Take another three eggs and separate the yolks from the whites; add the yolks to the other ingredients, and set the whites aside in the refrigerator for now.

3. Blend the eggs with granulated sugar using a blender until foam forms. Neutralize the baking soda and add it during blending. While continuing to blend, gradually add the flour in small portions.

4. By this time, squeeze the ready apricots and cut them into small pieces, then mix with the dough. Optionally, you can chop the apricots using a blender, but not until completely smooth. Small pieces should remain.

5. Grease the previously prepared baking pan with butter. Don't forget to grease the sides. It's better to choose a deep pan.

6. Peel the apples, cut them into slices, and place them in a baking dish, sprinkling with granulated sugar on top. Pour the batter over the apples and bake in a preheated oven at 200°C for half an hour.

7. Take the reserved egg white and beat it with granulated sugar until stiff peaks form. Remove the pan with the almost-ready cake from the oven and flip it so the apples are facing up. Evenly spread the beaten egg white over the top of the cake and return it to the oven.

8. After 10 minutes, when the top turns golden brown, remove the finished pie. Let it cool, then remove it from the mold before serving. Now the pie can be sliced and tasted.
