I've noticed this: the fresher the kefir, the better the charlotte rises in the oven. Once I tried making it with a kefir drink (bought by mistake), and it didn't turn out well—I had to use a lot of flour, and the dough itself was not right at all. Good luck with your cooking! Grate the cabbage on a grater. Then fry it in butter.

Let's make the dough. Pour the kefir into a bowl.

Add the baking soda and mix. Add two eggs to the resulting mixture. Mix.
