
Charlotte with quince and apple
Description
The pastry is prepared simply and quickly. The charlotte is very easy to make. You just need to beat the eggs well. Fresh quince is not very edible. It must be subjected to heat treatment before consumption. Therefore, it is very convenient to make the charlotte with quince jam. I do not recommend adding a lot of apples, so the pastry does not become soggy. It can be served with tea or coffee.

Prepare the ingredients for making a charlotte.

Wash the apple, peel and slice it. Place it in a pan, add two tablespoons of water and simmer until all the juice evaporates.

Crack the eggs into a bowl.

Whisk them lightly with a whisk.

Gradually add the sugar and beat for 8–10 minutes. A fluffy, white mass should result.

Line the baking pan with parchment paper. Arrange the slices of apple and quince.

Lay the dough over the fruit. The diameter of my pan is 20 centimeters.

Preheat the oven to 170‑175 °C. Bake the charlotte for 45‑50 minutes. Check doneness with a wooden skewer. When inserted into the center of the cake, it should come out dry. To prevent the charlotte from collapsing after you remove it from the oven, do the following. Turn the pan upside down and place it on three glasses or cups. Keep the cake in this position until fully cooled.

Cool the finished charlotte. Run a knife along the edge of the cake in the pan, cover with a large plate and flip the charlotte.
