Perfectly pairs with tea and coffee. 1. First, separate the egg whites from the yolks. Place the whites into the refrigerator to chill. 2. Add sugar substitute to the yolks and whisk thoroughly. Then add 1 tablespoon of kefir. 3. Let's make a flour substitute: mix oat bran, dry milk, starch, isolate with gluten, and baking powder. Add this dry mixture to the egg mixture and stir well. 4. Cut the apples: part into slices, part into cubes. Place some of them at the bottom of the baking form (I use a silicone mold, which is the most convenient). 5. Now take out the chilled egg whites from the refrigerator. Beat them until stiff peaks form. Add lemon acid (or concentrate) and 2 slightly heaping teaspoons (or 2 measuring spoons) of sugar substitute. 6. Very gently fold the prepared egg white mixture into the previously prepared batter. 7. Pour half of the batter over the apples in the mold. Arrange the remaining apples on top, then cover them with the rest of the batter. 8. Bake in the oven at 180°C (356°F) for about 25–30 minutes. If using a multicooker, set it to "Bake" mode for 40 minutes. That's it—the recipe is complete. Serve with tea or coffee.
