Shaniki
Description
Goes perfectly with tea and coffee. I did not add sugar to the dough so the finished pastries would not turn cloyingly sweet. Be sure to bookmark this recipe. The bake is done. Serve at the table.
Instructions
- 1
Step 1

Prepare all ingredients in advance. The butter should be soft by the time you start cooking. 🌸
- 2
Step 2

In a large bowl, sift all the flour, add the salt and baking powder. Mix everything together.
- 3
Step 3

Add the cottage cheese and rub it into the flour with your hands.
- 4
Step 4

Add softened butter.
- 5
Step 5

Knead a soft dough that does not stick to your hands. Wrap it in plastic wrap and put it on a refrigerator shelf for one hour.
- 6
Step 6

Then divide the dough into 2–3 portions and roll each portion into a small log; cut each log with a knife into equal pieces.
- 7
Step 7

Roll out each piece of the cottage cheese dough into a thin pancake and place one side on sugar on a plate.
- 8
Step 8

Fold this pancake in half so the sugar is inside. Also roll one side in sugar.
- 9
Step 9

Fold in half again with the sugar-coated side facing inward.
- 10
Step 10

Arrange all the shaped cookie dough on a baking sheet lined with parchment paper. Bake in an oven preheated to 180°C for about 15 minutes.
- 11
Step 11

Serve the finished shaniki to the table right away.
