Description

Homemade baked goods for tea. Shangi with cheese and egg are simple to make. You can prepare the dough in a bread machine, which will save a lot of time. When spreading the filling, bear in mind that these are not vatrushki, so you should not make a deep hollow. Before putting them in the oven, brush the filling with sour cream—this will give the pastry a beautiful golden-brown color. They can be served with tea or coffee.

    Prepare the necessary ingredients.

    In a bowl, combine warm water (36–38°C), yeast, 2 tsp sugar, and 1 tsp salt. Stir.

    Add two thirds of the specified amount of flour, pour in half of the specified oil, and start mixing the dough with a spoon. Gradually add more flour and pour in more oil. As soon as it becomes hard to mix, knead with your hands.

    Round the dough into a ball, cover with a towel, and leave at room temperature for 1.5 hours to rise.

    While the dough is rising, prepare the filling. Grate the cheese on the coarse side of a grater into a bowl.

    Add chopped dill, eggs grated on a coarse grater, and sour cream. Add enough tablespoons of sour cream to get a thick, cohesive mixture. The filling should not be runny or fall apart into pieces.

    Divide the finished dough into 6 portions. Approximate weight per portion is 90–100 g. Roll into balls.

    Grease the baking sheet with a thin layer of vegetable oil. Flatten each ball with your hands into a round about 2 cm thick. Cover the baking sheet with a towel and leave for 15 minutes. Then make a small indentation in the centre of each round. Spread the filling, brush the filling with sour cream and leave for another 10 minutes. When the time is up, bake the shangi in an oven preheated to 180°C for 25–30 minutes. Adjust to your own oven!

    Remove the finished cheese-and-egg shangi from the baking sheet.
