
Shangi with mushrooms
Description
When preparing the filling, it is very important not to over-dry the mushrooms while frying. As soon as they change color and the liquid has almost evaporated, turn off the heat. If you still didn’t keep track and the mushrooms are a bit dry, add 2–3 tablespoons of sour cream and mix well. Serve warm or chilled. Perfect with tea.

Prepare the necessary ingredients.

Make the dough. Pour a glass of warm water (38–40 degrees) into a bowl. Add salt, sugar, and an egg. Whisk until combined.

Add flour and vegetable oil.

Knead a soft, elastic dough that does not stick to your hands. Cover it with a towel and leave it in a warm place for 1 hour.

While the dough is rising, prepare the filling. Cut the onion into medium dice. Heat 6 tbsp of oil, add the onion to it, and fry over medium heat until golden brown. Stir occasionally.

Wash the mushrooms well and cut them into large cubes. Transfer them to the fried onions. Fry everything together until the mushrooms are done.

Salt the prepared mushrooms with onions to taste and add black pepper. Mix. Chill.

After the specified time, the dough will noticeably increase in size. Punch it down.

Grease your hands with vegetable oil. Divide the dough into 8–9 parts. Shape into rounds.
