Perfect with meals and drinks. To get as close as possible to the original and recreate the classic shanan zohey recipe, use rye flour (preferably coarse-ground). 1. Put the sour cream in a small saucepan and place it over heat. 2. With a wooden spatula or spoon, gently stir the sour cream while it comes to a boil. 3. Then gradually add the flour, stirring constantly. 4. As you cook, butter will begin to separate on the surface — and that is a good sign. If this does not happen, you are not stirring well enough. To make the process easier, you can also add a little milk or water. 5. Add a little salt to taste. No spices are needed at all. 6. It is quite easy to tell when shanan zohey is ready at home. Has the mixture stopped sticking to the spoon while you stir, and has an appetizing golden crust formed? Then it is time to take the dish off the heat and serve it.
