A delicious appetizer for any gathering. Tasty, juicy, and incredibly fragrant grilled champignons make a wonderful complement to traditional meat shashlik. With this recipe, you will never again ask yourself, “So what am I supposed to eat the meat with?” To make the mushrooms truly delicious, they—like the meat—need to be marinated beforehand. There are countless marinades; I will offer you a traditional option—salt, pepper, and lemon juice. This marinade will not overpower the aroma of the mushrooms; it will only highlight and enhance it. Champignons cook very quickly on the grill, and they do not need as much heat as meat, so you can grill them after the meat—that will be the ideal temperature for them. They can be served warm or chilled.

2. Without peeling, wash the mushrooms thoroughly under running water. Sprinkle with salt and pepper, drizzle with lemon juice, and mix well. Let marinate for 2-3 hours.
