Shakarlama with almonds

Description

The pastry is easy and quick to make. As far as I know, shakarlama is a Georgian cookie. Though it is probably just the Georgian name for a cookie that is popular in many Eastern countries and has its own name in each of them. Either way, making shakarlama is very simple, and the cookies turn out indescribably delicious—nothing like store-bought cookies. And how well such nutty cookies go with strong coffee… You can serve them with tea or coffee.

    Here are our ingredients. Toast the nuts (almonds and walnuts) in a dry frying pan for about 1 minute.

    Finely grind the nuts in a blender—not to a powder, but fine enough.

    Whisk the eggs with the sugar until the mixture is foamy.

    Mix the beaten eggs with sugar, one third of the sifted flour, ground nuts and cardamom (if using powder, literally one third of a teaspoon), melted butter and sour cream. Mix well.

    Gradually adding the remaining flour, knead a firm but sufficiently soft dough.

    Roll the dough into a sheet 1 cm thick. Using a plain ordinary glass, cut out the future cookies. From the leftover scraps, roll a new ball, roll it into a sheet, and cut out cookie shapes again.

    Place the circles we cut out on a baking sheet lined with parchment paper. Put the baking sheet in an oven preheated to 180 degrees and bake for about 30 minutes.

    Let the finished cookies cool slightly and serve with tea or coffee. Enjoy!
