Unlike Chinese tea, whose leaves are pan-fired, Japanese tea is simply steamed for 15–20 seconds to prevent oxidation. After that, the leaves are shaped by rolling and then dried.

Bring purified water to a boil and let it cool down to 90 degrees Celsius. Never pour boiling water over tea!

Let the Shetian steep for just 30-60 seconds, then immediately pour it into a beautiful ceramic cup. This is what high-quality Shetian looks like. This tea can be re-brewed with a slightly smaller amount of water, but there should be a short break between brews. If Shetian has been sitting for more than 2 hours, it's pointless to brew it again.
