Mr. Eggplant
Description
The recipe won't take much time. This dish is best served with vegetables or a salad, making it even more delicious. "Senor Eggplant" is somewhat similar to classic stuffed eggplant boats: filling, tasty, and simple. If you don't have time to bake eggplant boats, this recipe will save you, as it requires only 30 minutes to prepare eggplants with minced meat. Don't forget to sprinkle eggplant slices with salt to draw out the bitterness; otherwise, the dish won't taste good. Serve hot.

1. Cut the eggplants diagonally into long slices, salt them, and let sit for 15 minutes to remove bitterness. Mix the ground chicken with garlic, salt, and spices (coriander, basil, black and white ground pepper).

2. Salt the eggs and lightly beat them. Place a layer of filling on an eggplant slice. Coat the slice in flour, then dip in the egg. Fry the slices on a well-heated skillet, starting with the side with the filling facing down.
