
Lightly Salted Salmon (Quick)
Description
Lightly salted salmon at home is simple and quick to prepare. Another advantage: if you make the fish at home, you can always control the level of salting yourself and add the spices you like. The fish needs 2 days to cure, but if you need it ready in 5–6 hours, slice it thinly before salting and follow the rest of the recipe. Serve with herbs and sauce.

Wash the citrus fruits, pat them dry with a towel, and remove the zest.

Into a deep bowl, add salt, sugar, pepper, ground coriander, and citrus zest. Mix everything thoroughly.

Place the salmon fillet in a dish and coat it on all sides. The fish should be completely covered with the mixture. Cover the dish and refrigerate for 2 days.

Once the fish has finished curing, remove it from the refrigerator and rinse it under cold water.
