Norwegian-Style Salmon

Description

Perfect for the table and for drinks. I really love salmon on its own, but this original and simple Norwegian-style salmon recipe truly won my heart! The fish turns out both moderately salty and moderately piquant—such a very interesting combination, I recommend it! Still, for making Norwegian-style salmon at home, I recommend using aquavit specifically—it adds a barely noticeable pleasant flavor note, while our alcohol smells like pure spirit, nothing more. So don’t be stingy, especially since you’ll need only a tiny little bit of the imported drink. Serve the appetizer to the table.

    1. Let the fillet thaw, cut it into two parts, and rub each part on both sides with salt and sugar.

    2. Finely chop the dill, remove the zest from the fruit, and finely chop the zest as well.

    3. Mix the chopped zest and dill with pepper, and in a deep bowl arrange in layers—a layer of fish, a green layer—until the ingredients are used up.

    4. Carefully pour aquavit (or tincture, vodka, whisky) along the edges of the dish so that it gets on the fish. Cover with a plate or lid on top and place under a press.

    5. Keep the fish under a press in the refrigerator overnight, then take it out, remove the zest and herbs, and taste for salt.
