
Herring at Home
Description
This recipe won't take much time. By preparing herring using this recipe, you'll get the tenderest, most aromatic, and not too salty fish, which pairs perfectly with potatoes and onions. Before serving, remove the innards, skin, and bones from the herring, cut into pieces, and serve, drizzled with lemon juice. Serve with herbs and sauce.

To prepare herring at home, thaw it first if needed. Then remove the gills from the herring, but leave all the innards in place.

Prepare the brine in advance. For it, take a liter of water and dissolve a cup of salt in it. Then add sugar and water to a saucepan. Boil the brine until the salt and sugar are completely dissolved. Cool the finished brine until it reaches room temperature.

Place the herring in an enameled pot, belly side up. Pour over the fish with brine that has cooled to room temperature. Then cover the herring with a plate to press it to the bottom of the pot. Place a weight on top so the fish is fully submerged in the brine. Salting will take 12 hours; after that, drain the brine.
