
Chopped herring with garnish
Description
Suitable for both holidays and everyday meals. Salted herring, beautifully garnished with vegetables, will make a fine addition to a festive table. Preparation: Soak a slice of wheat bread in water for 2–3 minutes. Clean and gut the herring. Run the herring through a meat grinder together with the slice of bread and onion. Thoroughly mix the resulting mixture with butter, sugar, and vinegar. Arrange the minced herring (with the tail and head) on a platter, shaping it to look like a whole fish. Slice the cucumbers and tomatoes into rounds. Finely chop the egg whites, rub the yolks, then mix with finely chopped green onions. Peel the apple, core it, and cut into slices. Place the apple slices on the platter with the fish to form dorsal fins. Arrange the garnish attractively around the herring, decorate with parsley, and serve. Serve the appetizer at the table.
