
Spiced Salted Herring per GOST
Description
A tasty appetizer for any gathering. Herring cured in the traditional way is easy to make at home—you just need a little patience. Use fresh fish: the eyes should be clear, and when you press the flesh, the indentation should spring back immediately. If you’re using frozen fish, thaw it on the bottom shelf of the refrigerator. If you don’t like certain spices, simply leave them out. Serve warm or chilled.

Prepare all the necessary ingredients for making spiced salted herring according to GOST.

Place all the spices, salt, and sugar in a pot.

Pour cold water into a pot and bring to a boil until the salt and sugar dissolve. Remove the pot from the heat and let cool completely.

Rinse the herring thoroughly and place it in a container. Cover the fish completely with the brine so that all the spices end up in the container.

Close the container with a lid and refrigerate for three days. After that, it can be served.
