
Swedish-Style Herring
Description
The recipe won't take much time. For those who prefer more aromatic marinades, I suggest adding coriander seeds, a dried clove bud, and allspice berries to it. You can marinate herring fillets for 6 to 24 hours. Serve with herbs and sauce.

Prepare the ingredients. The herring should be large, fatty, and sufficiently salted. Peel and wash the onion, carrot, and dill.

First, prepare the marinade. To do this, bring water to a boil in a saucepan, add sugar, a bay leaf, and peppercorns, and add the vinegar last. If the herring is not very salty, add a little salt to the marinade. Taste it—it should appeal to you above all.

Meanwhile, while the marinade is cooling, clean the herring of its innards and skin, remove the fillets from the backbone, and remove the rib bones. Cut the fillets into slices about 2 centimeters thick.

Cut the carrots and onion into rounds, chop the dill.

Place the herring in a jar, alternating layers with dill, carrots, and onion. Pour the cooled marinade over everything, cover with a lid, and let marinate for 24 hours. You can put the jar in the refrigerator.
