
Norwegian-Style Herring
Description
A delicious appetizer for any gathering. In general, this classic Norwegian herring recipe calls for using raw vegetables in which the fish pieces are marinated for about an hour, but I liked the version with boiled vegetables more. Probably because it reminds us of our vinaigrette salad, nothing else! :) So now you know, it can be served warm or chilled.

1. Prepare the ingredients. Boil the potatoes and beets in salted water until done.

2. Peel the carrots and cut them into cubes. If you want, you can boil them as well, or use them fresh — whichever you prefer.

3. Let the potatoes cool, then peel them as well and cut them into cubes.

4. We also peel and chop the beetroot.

5. Wash the apple, remove the core with the seeds and the tough peel. Cut it into cubes, and to keep it from darkening, sprinkle it with lemon juice.

6. Wash and peel the onion, then slice it into very thin rings.

7. Now place all the chopped vegetables into a bowl, dress them with the juice of half a lemon, add salt, sugar, and vegetable oil. Mix thoroughly.

8. Rinse the herring under running water, pat it dry, and remove any remaining bones. Slice it into very thin pieces and arrange them in a circle on top of the mound of vegetables, pressing each piece in slightly.
