
Kashubian-Style Herring
Description
The recipe won't take much time. When making the sauce, watch how much liquid evaporates. It's important that it be moderately thick. You can also add aromatic herbs: marjoram or rosemary. The appetizer is ready. Serve immediately.

Prepare the necessary ingredients.

Heat the oil in a skillet. Add the onion, sliced into quarter rings. Sauté until softened.

Rinse the prunes and raisins under running water. Pat dry to remove excess moisture. Dice the prunes finely.

Add the dried fruit to the onions. Cover with a lid and simmer over low heat for 5 minutes.

Mash the tomatoes and mix with the juice.

Add the tomatoes with their juice, juniper berries, sugar, and pepper to the skillet. Stir. Continue heating over low heat for 2–3 minutes.

Add the mustard, pepper, salt, and vinegar. Stir. Simmer for another 2–3 minutes, then remove from the heat. Let cool.

Clean the herring, remove all the bones, and fillet it. Cut into pieces.

Take a plastic or glass container. Spread 1/4 of the chilled sauce on the bottom. On top of it, spread some of the fish.

Coat the herring with part of the sauce and arrange the remaining fish.

Spread the remaining sauce over the herring layer. Cover with a lid and refrigerate for 3-5 days.
