
Fluffy pie with currants
Description
The pastry is easy and quick to prepare. To make a sweet pie with currants, we need flour, butter, eggs, currants, starch, and sugar. It can be served with tea or coffee.

1. In a bowl, mix the sifted flour with baking soda, add room-temperature butter, half a cup of sugar, and two egg yolks. Knead until smooth. Then wrap the dough in plastic wrap and refrigerate for half an hour.

2. Remove the berries from the stems, rinse them, and dry on a paper towel.

3. Preheat the oven to 165 degrees. Remove the dough from the refrigerator, roll it out, and place it into a parchment-lined pan. Press the dough with your fingers to fit the bottom and sides of the pan; the dough thickness should not exceed one and a half centimeters. Bake for 25 minutes.

4. Remove the golden base from the oven and let it cool. Increase the oven temperature to 200 degrees. While the base is cooling, beat two egg whites until foamy, then add starch and sugar, continuing to beat for another 5 minutes. Add the berries to the beaten whites and gently mix. Then spread the mixture over the cooled base.
