Perfectly pairs with tea and coffee. This fragrant, sweet-and-sour cake with a rich cherry flavor will delight your loved ones on a hot summer day, served with a glass of cold compote, milk, or lemonade. It's very easy to prepare. Many home cooks avoid baking with yeast dough, fearing it won't rise. The key to success is using fresh yeast. With that, everything will surely turn out perfectly.
Instructions

Step 1

Pour warm milk into a bowl. Add the yeast. I'm using compressed yeast; you'll need 7-8 grams of dry yeast. Add 1 tablespoon of sugar and mix. Let it stand for 10-15 minutes. After this time, the yeast will activate and become foamy.

Step 2

Add another 4-5 tablespoons of sugar, vanilla sugar, and salt.
- 3
Step 3

Place the mayonnaise in a bowl with milk, yeast, sugar, vanilla sugar, and salt. Mix these ingredients well. You can whisk them with a whisk.
- 4
Step 4

Gradually add the sifted flour.
- 5
Step 5

Knead a soft, elastic dough. Cover it with plastic wrap and place in a warm spot.
- 6
Step 6

After 50-60 minutes, the dough will have doubled in volume and will be ready to work with.
- 7
Step 7

Divide the dough into two unequal parts. Roll out the larger part into a sheet and place it in a baking pan.
- 8
Step 8

Wash the cherries and remove the pits. Sprinkle the dough with starch and place the cherries on top. The starch will absorb the cherry juice.
- 9
Step 9

Roll out the second part of the dough and cut it into strips. Place the strips on top of the cherries.
- 10
Step 10

Let the pie stand at room temperature for 25-30 minutes. Then brush it with beaten egg and place in an oven preheated to 175-180 degrees. Bake the pie for 40-50 minutes.

Step 11

Remove the finished cake from the pan, cover with a towel, and let it cool. Then slice and serve.
