In a large bowl, rub a piece of fresh yeast with your fingers and add a tablespoon of sugar to it.

Pour in warm milk and vigorously mix these ingredients with a whisk until the sugar and yeast dissolve.

    Step 4

Sift 100 grams of flour into this yeast mixture.

  5. 5

    Step 5

    Step 5

Mix it in, and you should get a mixture with the consistency of pancake batter—this is the starter. Cover the bowl with the starter with a kitchen towel and let it sit undisturbed for 30 minutes.

  6. 6

    Step 6

    Step 6

In a separate bowl, crack the eggs, add the remaining sugar, and pour in the melted oil. Mix everything with a whisk until a smooth mixture forms.

  7. 7

    Step 7

    Step 7

By this time, the sponge has already risen, meaning it has noticeably increased in volume. Add the egg mixture to the sponge and incorporate it with a spoon.

  8. 8

    Step 8

    Step 8

Now add salt and gradually sift in the flour in parts. First mix the flour in with a spoon, then start kneading the dough with your hands. The dough should not stick to your hands in the end, but it should remain soft and not overloaded with flour. Therefore, the amount of flour indicated is approximate, allowing you to adjust it as needed. Knead the dough by hand for about 10–15 minutes.

  9. 9

    Step 9

    Step 9

The dough is ready! Now you can let it rise, or optionally add raisins or candied fruits and then let it rise as well. After that, you can shape the buns according to your preference. They can simply be sprinkled with sugar, or filled with any filling you like.

  10. 10

    Step 10

    Step 10

I shaped the dough into a ball, transferred it to a large bowl, covered the bowl with a kitchen towel, and let it rise for 2 hours. During this time, you can punch down the dough once.
