1. Warm the milk to room temperature, add the yeast, 75 grams of sugar, and 5-6 tablespoons of flour. Leave the starter in a warm place until it doubles in size.

2. In a separate bowl, pour the melted butter, add 1 egg, 75 grams of sugar, and salt. Mix until smooth and well combined.

3. Combine the sponge with the melted butter and egg, gradually add the remaining flour in portions, and knead the dough. Let it rest at room temperature for 2 hours.

4. Soak the raisins in boiling water for 10 minutes for the filling. Place the cottage cheese in a bowl, add the zest of one orange, 100 grams of sugar, and the soaked raisins; mix everything well.

5. After the dough has rested, roll it out and cut out circles. Make several slits in each circle, place the filling inside, then bring together the cut edges to form a rose shape. Arrange all the buns on a parchment-lined baking sheet, brush them with beaten egg, and bake in a preheated oven at 180°C (356°F) for 20 minutes.
