
Sarsuela
Description
There are many recipes for zarzuela: it's a rather popular dish in Spain, but each region has its own preparation nuances. I particularly liked this recipe (into which I dared to add my own touches). So, to prepare zarzuela at home, you'll need plenty of shrimp—try to buy different varieties. For example, you can mix king prawns with cocktail shrimp (that's what I usually do). You'll also need chicken broth, as zarzuela is a rich, hearty stew. Let's take a look at the recipe.

Boil the shrimp, adding herbs and spices (if the shrimp are frozen, thaw them first).

Now cut the sausages into small squares (Spanish sausages are basically our blood sausage). You can use hunting sausages instead. Fry them in olive oil with finely chopped onion and garlic.

Pour the chicken broth into the same pan and simmer for several minutes over medium heat. Then add the chopped tomatoes, green pepper, wine, and spices to the sausages and broth. Mix well and simmer for about 7 minutes.

Add the boiled shrimp to the pot with the broth and vegetables. Simmer everything together for about 2 minutes. That's how simple the recipe for zarzuela is! Serve the stew hot. As a side dish, you can use rice or potatoes. Garnish with fresh herbs before serving, and you may also serve it with oysters.
