
The most delicious carrot cake
Description
Carrot cake – the perfect dessert for a birthday. It is tasty, beautiful and fragrant. In summer it can be decorated with raspberry berries, lime, lemon, etc., and in winter – with frozen berries or oranges, kumquat, mango. It can be served with tea or coffee.

Prepare the listed ingredients.

First, prepare sponge cake batter for a single cake. Crack 4 chicken eggs into the bowl of a kitchen mixer, add 1 cup of granulated sugar and a pinch of salt.

Whisk everything into a fluffy foam for about 4–5 minutes, but no longer, so as not to overbeat the egg whites.

Add sifted wheat flour, 150 g, to the egg mixture together with the leavening agent. Gently stir with a whisk or a silicone spatula, but do not beat.

Peel the carrot, wash it and grate half of the vegetable into a bowl, pour in half of the vegetable oil and gently mix everything. At this same stage turn the oven on to 180 degrees.

Grease the pan with butter and pour the sponge batter into it. Place the pan in the oven and bake for about 35-40 minutes until a dry toothpick comes out clean.

Cool the finished carrot sponge, trim it by cutting off the top. Bake another sponge in the same way and let it cool. Be sure to soak the sponges with any syrup, jam diluted in water, etc., so that they are not dry in taste.

In the bowl of a stand mixer, beat chilled sour cream of any fat content with a thickener, 1 cup of sugar, and vanilla flavoring. The cream should turn out thick.

Slice the biscuits horizontally in half to make two layers. Spread a portion of the sour cream frosting on one layer, distributing it evenly.

Then the second layer, sour cream cream, third layer. Coat the entire assembled cake with sour cream cream and place it in the refrigerator for 2–3 hours to soak, preferably overnight. If you didn’t add soaking liquid to the layers, the sponge will “draw out” water from the cream and it will crack on top – remember that!

Then decorate the cake to your liking and invite your family for tea.
