Description
The appetizer is quick and simple to prepare. Making falafel is very easy and fast. The longest step is soaking the chickpeas. It's convenient to do this overnight, and in the morning quickly grind them with spices, shape into small balls about the size of a walnut, and fry them in a deep fryer. See the detailed recipe below. Serve with herbs and sauce.

Soak the chickpeas in 1 L of water for several hours, preferably overnight. Drain the water and remove the skins. Wash and peel the onion and garlic, then mince them.

Grind the chickpeas in a blender, add chopped herbs, onion, and garlic, salt, pepper, cardamom, flour, and baking powder, and mix. If the mixture is still dry, add 2–3 tbsp water. Transfer to a bowl and let stand for 30 minutes.

Then, using wet hands, form 20 balls about the size of a walnut. Fry them in hot oil for 3–4 minutes until golden brown on all sides.
