It is precisely because the dough rises several times in a warm place that it becomes saturated with air, making the baked goods light and fluffy. Don't skimp on oil when frying doughnuts—they should float in it so they can puff up nicely. Serve with tea or coffee.

    1. Place the butter in a heavy-bottomed saucepan and heat until almost boiling. Remove from heat, add salt, sugar, cold milk, and cold egg. Mix well with a whisk.

    2. Add the yeast and let the mixture stand for 5 minutes in a warm place. Pour the yeast mixture into a large bowl, add the flour, and knead the dough first with a spatula, then with your hands.

    3. Cover the dough with a towel and let it sit in a warm place for 1–1.5 hours. Punch down the dough and knead it slightly; it should be elastic. Let the dough rise in a warm place for 40 minutes, covered with a towel.

    4. Divide the dough into 24 equal parts. Roll each part into a thin "sausage," then twist one end upward and the other end downward (forming a spiral). Join the two ends together and braid them into a braid.
