
The most authentic bagels
Description
Perfectly pairs with tea and coffee. Bagels are an excellent treat to serve with tea or coffee. To prepare them, you need a simple dough made with kefir of any fat content—even slightly expired kefir works well. The key secret in making bagels is that they must first be boiled and then baked in the oven. For a richer color and glossy finish, I recommend adding a bit of malt extract to the water. Serve warm or cooled. Ideal with tea.

1. Pour kefir into the bowl of a dough mixer, add sugar, salt, and sifted flour with baking powder. Knead the dough in the mixer for several minutes.

2. At the end, add the vegetable oil and knead the dough again until the oil is completely absorbed. Place the dough onto a work surface and knead it by hand briefly. Shape it into a ball, cover, and let rest at room temperature for 1 hour.

3. Place half of the dough in a bag and put it in the refrigerator. Divide the other half of the dough into 16 pieces, roll into balls and flatten into rounds. Use a shot glass to make a hole in the rounds, then drop the bagels into boiling water with malt extract.

4. After 45 seconds, remove the bagels onto a paper towel. After a few minutes, transfer the bagels to parchment paper and bake in a preheated 200-degree oven for 10 minutes. Let the bagels cool.
