Instructions
- 1
Step 1

Prepare the ingredients. Let's get started. You won't need vegetable oil; I just forgot to remove it from the table.
- 2
Step 2

Sift flour (about two cups) into a bowl. Pour in the kefir, add baking soda, salt, and egg. Knead the dough.
- 3
Step 3

I used 2.5 cups of flour. Don't knead the dough too stiff; as soon as it stops sticking, it's ready. Cover with a cloth and set aside for now.
- 4
Step 4

For the filling, combine cottage cheese with grated cheese and grated butter, a pinch of salt, and ground black pepper.
- 5
Step 5

The filling is ready.
- 6
Step 6

Divide the dough into 8 equal parts. Roll each part into a ball and flatten slightly. Divide the filling into approximately 8 portions as well. Place a portion of the filling onto each flatbread.
- 7
Step 7

Fold the edges of the dough over to completely enclose the filling inside. Carefully roll out the dough with a rolling pin to a thickness of about 1 cm.
- 8
Step 8

Fry khachapuri on a clean, dry cast-iron skillet on both sides.
- 9
Step 9

Brush each flatbread with butter. Stack them on top of each other in a pile.

Step 10

Done!
