
Pork samosas

In a mixing bowl, pour in cold water and add the egg. Add salt and mix well with a whisk.

Gradually add the flour and mix it with the liquid ingredients.

Knead the dough by hand, gather it into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

While the dough is "resting", prepare the filling. Cut the pork into small pieces.

Finely chop the onion. You can cut it into half-rings or cubes, whichever way you prefer.

Place the prepared pork and onion into a bowl, salt and pepper to taste. Add cumin, but before adding it to the filling, rub it between your palms.

Pound the filling well so that the onion releases its juice and all the flavors blend together. You can use a wooden pestle for this purpose.

Lightly flour the work surface, divide the dough into 4 parts.

Roll out a piece of dough into a large, thin sheet. Dust the work surface with flour if the dough starts to stick. Brush the dough with softened butter and set it aside.

Do the same with the remaining three pieces of dough, roll each into a sheet and stack them on top of one another. Also, brush the top of the final sheet with soft butter.

Roll all four layers of dough tightly into a roll, being especially careful and compact when starting to roll, along the entire length, so that the dough doesn't come apart during baking.

Cut the dough roll into 12 pieces.

Slightly flatten each piece of dough and place on a board dusted with flour, then put in the freezer for 15 minutes. This will make the dough easier to work with.

Prepare for brushing: one egg yolk mixed with 1 tablespoon of milk; instead of milk, you can simply use water.

Preheat the oven in "top-bottom" mode to 180 degrees. Roll out a piece of dough into a flat sheet and place the filling in the center.
