Description
This is not quite a classic pumpkin samsa recipe, but it turns out incredibly appetizing and very tasty. You can use ready-made puff pastry if desired. The filling can include a variety of spices you like, from black pepper to dried herbs. Serve with tea or coffee.

1. For the filling: peel the onions and slice them into half-rings. Place in a frying pan with vegetable oil and sauté slightly until translucent. Peel the pumpkin and cut into thin strips. Add to the pan, gently stir, and simmer over very low heat. Add salt and spices to taste, and cook until done, stirring occasionally.

2. Sift the flour onto the work surface, add a pinch of salt and cold butter. Cut it into fine crumbs using a knife. Then gradually pour in very cold water, mixing to form a smooth dough. Next, roll the dough into a ball and refrigerate for about 20 minutes. Only after the dough has "rested" can you begin working with it.

3. Roll the dough into a small log and cut it into pieces of equal size. If using ready-made dough, roll it out slightly.

4. On a floured surface, first flatten each piece by hand.

5. Then roll out quite thinly using a rolling pin.

6. Place the filling in the center. By the way, homemade pumpkin samsa can also be sweet if you add honey or sugar to the sautéed pumpkin.

7. Now comes a special step—sealing the edges. Seal about one-third of them lengthwise.
