Description

Delicious pastry for the whole family. The filling is made with young lamb (lamb meat) combined with onion and spices. You can add seasonings and spices to your taste, as well as some fresh herbs. The dough for samsa is easy to prepare; the key is to add vegetable oil right at the beginning. This will make the dough soft and velvety to the touch, tender and delicate. Serve warm or chilled. Perfect with tea.

    Prepare the listed ingredients. Peel the onion and rinse it in water. Remove tendons and membranes from the meat, rinse it, and cut into small pieces; the smaller the pieces, the faster the samsa will cook.

    First, prepare the dough. In a deep container, mix half of the flour with the butter, water, and salt. Add the chicken egg and knead the dough.

    Gradually add flour until the dough becomes dense, smooth, and pliable. You should have some flour left over for rolling. Cover the dough with a bag or plastic wrap and let it rest for 15–20 minutes.

    Meanwhile, chop the onion into small cubes of the same size and add to the meat along with pepper and salt. You can also add a little cumin, meat seasoning, or chopped parsley. Mix everything thoroughly.

    Divide the dough into 3-4 parts and roll each part into a thin sheet. Brush with vegetable oil and stack on top of each other to create layers. Roll up tightly from the narrow edge into a roll.

    Cut the roll into pieces and roll out each piece, dusting the surface with flour.

    Place 1.5-2 tablespoons of filling in the center of the flatbread.

    Pinch one edge to the center, then fold the other two edges inward and pinch the edges together to form a triangle. Prepare the remaining samsa in the same way.

    Spray the baking sheet with oil and place the dough pieces seam side down. Optionally, spray them with oil and sprinkle with sesame seeds or brush with egg yolk. Preheat the oven to 180 degrees.

    Place the baking sheet in the oven and bake the samsa for 30-35 minutes until golden brown. Transfer it to a plate and let it cool slightly, covering with a towel. This allows the samsa to steam and become more flavorful and juicy.
