
Meat and potato samosa
Description
Perfectly pairs with tea and coffee. You can use any meat filling for the samosa, if desired, but lamb is the best choice. The meat juices will be absorbed into the potatoes, making them velvety in flavor. Add any spices and herbs to the filling according to your taste, as well as fresh parsley or cilantro. Serve the samosas hot with sour cream, garlic sauce, etc. The pastry is ready. Serve it at the table.

Prepare the listed ingredients. Rinse the lamb and remove films and tendons. Cut into small cubes. Peel the onion and rinse it in water. Boil the potatoes in advance for about 30 minutes.

Pour half of the wheat flour into a deep container and make a well in the center. Break the chicken egg into it, add half of the vegetable oil and water. Add salt and knead the dough, gradually incorporating the remaining flour as needed.

You should end up with soft dough and have a little flour left for rolling. Cover the dough with plastic wrap and let it rest for 15–20 minutes.

Peel the boiled potatoes and rinse them. Cut the potatoes, as well as the onion and meat, into small cubes. Mix all the chopped ingredients in a salad bowl, adding salt and ground black pepper. At this stage, you can also add other spices or seasonings.

Divide the rested dough into three parts and roll each part into a thin round layer. Brush their surfaces with the remaining vegetable oil and stack them on top of each other.

Carefully roll the dough into a log and cut it into portioned pieces.

Roll out each portion and place 1.5–2 tablespoons of filling on it.

Seal the edges, forming a triangle with seams. First, pinch one edge halfway, then lift the remaining part and pinch it in two places.

Spray the baking sheet with vegetable oil and place the samosa pieces seam-side down. Spray them with oil and sprinkle with sesame seeds, optional.

Preheat the oven to 180 degrees and place the baking sheet with the prepared pieces on the middle rack, baking the samsa for about 30-35 minutes. If the pieces are large, bake them for 40 minutes. Then transfer the samsa to a plate to cool slightly.
