
Kazakh-style samsa
Description
The recipe won't take much time. 1. Wash the liver, lungs, and heart, then place each into separate pots. Cover with water and set over heat. Boil until fully cooked, then drain the water and let the offal cool slightly. 2. Meanwhile, thaw the dough, place it on a floured surface, and roll it out—not too thin. 3. Once cooled, pass the boiled offal through a meat grinder or chop finely in a blender. 4. Pour a little oil into a high-sided frying pan and heat it up. 5. Peel the onion and dice it into small cubes. 6. Sauté the onion over medium heat until golden (you may add garlic and other spices to taste). 7. Add the boiled offal and stir-fry together with the onion. Season with salt and pepper to taste. Remove from heat and let cool slightly. 8. Cut the puff pastry into squares, placing a small amount of filling into the center of each. 9. Carefully fold into triangles. Place them onto a baking sheet lined with parchment paper or greased with oil. Brush the tops with beaten egg and sprinkle with sesame seeds, if desired. 10. Bake the Kazakh-style samsa at home for about 20 minutes. Once the tops turn golden brown, the dish is ready. The pastry is done—serve and enjoy.
