1. Pre-cook the mashed potatoes ahead of time; they should be warm. In a deep bowl, mix the dry ingredients for the dough.

2. Pour in warm milk and butter.

3. Knead a soft, pliable dough and let it rest in a bag for 30 minutes.

4. Now you need to prepare the filling. Peel the onion and cut it into cubes or half‑rings, sauté in oil until soft.

5. Place the minced meat and cook until done. I pushed the meat through a coarse grinder plate.

6. Add salt, spices, stir, and after a minute remove from the heat. The filling is ready.

7. Prepare two mixtures. The first – butter and vegetable oil. The second – flour and starch.

8. Using kitchen scales, divide the dough into 9 balls; each ball was 60 g for me.

9. Roll each ball in a mixture of flour and starch. Roll it out until thin and almost transparent. Diameter – 28–30 cm. Spread the center with a mixture of oils.

10. Flip the flatbread over, butter side down. Place a tablespoon of mashed potatoes in the center, and on top add one and a half tablespoons of ground meat.

11. Gather the edges into a knot, twist them, and cover with a “skirt”, folding the edges underneath.

12. Line a baking sheet with parchment paper and place the pies on it. Combine the remaining butter (more precisely a blend of oils) with an egg yolk. Brush the pies with this mixture. Put them in a hot oven for 20 minutes. The oven temperature is 200 °C.
