Moonshine from jam
Description
The recipe won't take much time. For making this alcoholic drink, you can use any jam you have on hand. If you don't have old jam but really want to try the recipe, you can use freshly made jam. Adding sugar is optional and depends on the sweetness of the jam itself. You can also use fermented jam—in that case, you may reduce the amount of yeast or even omit it completely. 1. First, pour water into a large pot and heat it to 60°C (140°F). Add the jam and mix thoroughly, then cool the mixture down to 30°C (86°F). 2. In a separate bowl, activate the yeast according to package instructions. Pour it into the fermentation vessel, add sugar, and stir until fully dissolved. Then add the jam mixture, install an airlock, and leave the must at room temperature for 7–9 days. 3. Strain the finished wash through cheesecloth, filtering out the sediment. Distill it once, then dilute with purified water to 20% ABV and distill a second time. 4. Collect the first 15% of the distillate in a separate container and discard it—this portion is unsafe to drink. Stop collecting when the alcohol strength drops below 40%. Dilute the final spirit with purified water and let it rest in a dark place for 3–4 days. The spirit is now ready to serve.
