Moonshine from black chokeberry
Description
The drink is prepared quickly and easily. Keep in mind that black chokeberry fruits contain very little sugar, so you need to add sugar at 50% of the total amount of berries. If you use berries right after the first frosts, the sugar content will be at its maximum, and you can slightly reduce the amount of sugar added. Now, let's begin preparation. 1. Use only ripe berries. Transfer them into a saucepan and mash them thoroughly, crushing each berry (do this manually with gloves or using a masher). 2. Transfer the mashed berries into a fermentation container, add sugar, pour in water and diluted yeast, then mix everything thoroughly. Cover the container's opening with gauze and set it aside in a dark place at room temperature for 48–72 hours. 3. After this time, check the mash for readiness: look for foam and a sour fermentation smell. As soon as these signs appear, install an airlock. 4. Leave the beverage to ferment under the airlock for 15–40 days, stirring the mash once every three days. 5. After fermentation ends, drain off the mash, leaving the sediment at the bottom. 6. Distill the finished mash to obtain about three liters of strong moonshine.
