
Homemade pasta with sage sauce
Description
The recipe won't take much time. Making homemade pasta isn't particularly difficult. The main challenge for many is rolling out the dough thinly enough. This is where modern appliances come in handy. You can use the fresh pasta right away, or dry it and store it for some time to use later in your favorite dishes. Serve hot.

1. Sift the flour into a bowl, add salt, and mix.

2. Make a well in the center of the flour mixture. In a separate bowl, break and beat the eggs, then pour them into the well and add water.

3. Using a fork, carefully fold the edges toward the center into the egg mixture.

4. Gradually mix the flour and egg mixtures.

5. Once both mixtures are combined, knead the dough and continue working it for 2-3 minutes, adding flour as needed.

6. Shape the dough into a ball and let it rest for 20 minutes.

7. After 20 minutes, divide the dough into 4 parts with a sharp knife.

8. Roll each piece of dough through a pasta machine.

9. Fold the two edges toward the center, dust with flour, and roll out the dough again using the machine. Repeat the procedure 2-3 times for each separate portion.

10. The finished dough sheet should be very thin, but not tear in your hands.

11. Change the pasta cutting attachment and process each portion.

12. Melt the butter in a frying pan or saucepan.

13. When the oil turns light golden, remove it from the heat and add whole sage leaves, juice of half a lemon.

14. In a separate pot, cook the pasta in salted water for 2 minutes, then immediately drain and rinse under cold water.

15. Place the cooked pasta into the pan with the butter and sage, add the grated cheese, mix well, and cook until the cheese has completely melted.
