
Liver Saltison
Description
Suitable both for holidays and everyday meals. Liver saltison is similar to a very tasty homemade pâté. It slices easily like sausage, but you can also spread it on bread if you like. It looks great on a festive table. Instead of fatback, you can use pork breast if you prefer. Either way, I am sure you will enjoy liver saltison. Below is a step-by-step cooking guide. Rinse and dice the liver into cubes. Cut the fat the same way. Add flour, semolina, egg yolks, and minced garlic. Season to taste, but I still recommend adding some.

Mix everything thoroughly.

Lay the future sausages on plastic wrap.

Wrap the minced meat in plastic wrap as shown in the illustration. Secure with kitchen twine.

Boil the saltison in boiling water for about two hours. Keep the heat low.

Cool the finished liver saltison. Refrigerate overnight.
