
Salsa from roasted tomatoes, garlic, and peppers
Description
Homemade sauce is easy and quick to prepare. The basic ingredients for salsa are tomatoes, peppers, onion, and garlic. In addition to these, you can add carrots, various herbs, and citrus juice (if you prefer a sweeter sauce). Salsa is similar to the tomato sauce we're used to, but spicier or more piquant. Serve the sauce chilled and store it in the refrigerator. The finished sauce can be kept in the refrigerator for several days.

1. Wash the jalapeños and cut them in half. If you prefer a milder salsa, remove the seeds and inner membrane and use only 2 peppers; for a spicier salsa, leave the seeds and membrane intact and use all 4 peppers.

2. Wash the tomatoes and cut them in half. Peel the garlic. Place the tomatoes and the jalapeño pepper cut-side down on a baking sheet lined with foil, and put the garlic on the sheet as well.

3. Pour olive oil over the garlic.

4. Place the baking sheet under the broiler for 2 minutes, or in a preheated oven at 200 degrees until a charred crust forms. Watch carefully so the garlic doesn't burn. The skins of the tomatoes and jalapeño pepper may turn black, which is normal.

5. Turn the tomatoes and garlic over, then place back under the broiler (or in the oven) for 2 minutes.

6. Remove the baking sheet, let the vegetables cool, peel the skin off the tomatoes and jalapeño peppers, and trim off the charred parts of the garlic.

7. Place the tomatoes, jalapeño pepper, and garlic into the blender container; if desired, you can slightly squeeze the tomatoes and drain off excess liquid.

8. Wash the cilantro, cut off the stems, and roughly chop the leaves.

9. Peel ½ red onion and dice it. Squeeze the juice from a lime. Add the onion and lime juice to the blender, season with a little salt. Blend for 5-10 seconds until the mixture becomes more or less uniform.

10. Add cilantro and pulse for another 3-4 seconds.

11. Add cumin, ground black pepper, and salt if needed, mix everything for 2-3 seconds; if the tomatoes are too sour, add a little sugar.
