
Boiled Salo with Garlic
Description
This salo can be prepared as a snack or used to complement first-course dishes. You can take it with you on picnics or to work. By varying the selection of spices, you can get a new flavor each time. It can be served warm or chilled.

Before you start cooking, prepare everything you need. You can adjust or increase the proportions to taste. Choose your favorite spices. But pepper and garlic will be quite enough.

Pour water into a pot. Add salt, pepper, a bay leaf, a couple of garlic cloves, and spices. Place over heat and bring to a boil.

Drop the pieces of salo into the boiling brine. Bring back to a boil. Simmer over low heat for 1–1.5 hours. All the pieces should begin to pierce easily with a knife.

Place the finished salo on a plate and let it cool until warm.

Stud with garlic.

Place each piece in a bag or wrap it in plastic wrap. Refrigerate overnight. The salo will absorb the garlic and set.
