
Boiled Lard Appetizer
Description
The appetizer is quick and easy to prepare. Layered salo is good because it is evenly infused with salt, spices, and vegetable juice (in this case, carrot juice). At first glance, it may seem that the appetizer will not hold its shape, but it is enough to simply tie the salo well with string before boiling — and the next day you can slice it into neat portion-sized bars. I recommend using sea salt together with pepper and spices — the salo will taste better this way. Serve the appetizer at the table.

1. Grate the carrots on a coarse grater into long strips. Mince the garlic. Prepare the salo: cut it lengthwise into slices.

2. Generously rub each layer of salo with salt (with pepper and dried garlic), mustard, minced garlic, and carrot. Similarly, place the next layers of salo on top.

3. Carefully and tightly tie the fatback with string so it holds its shape after boiling. Wrap the fatback in a baking bag and tie it with string again.

4. Place the salo in cold water, bring to a boil, and simmer over low heat for 40 minutes. Let the salo cool in the water, transfer it to the refrigerator, and leave it chilled overnight. The appetizer is ready.
