
Salt Pork in Brine with Garlic
Description
A tasty appetizer for any gathering. Salo is very often baked in the oven in foil or in a roasting bag; it can also be cured in salt or in a marinade. If you want aromatic salo, add more spices to the brine: cloves, allspice, and bay leaf. Salo should be stored in the refrigerator, and for serving at the table, slice it into thin pieces. Serve the appetizer at the table.

First, cut the salo into small pieces and divide them between two jars.

First, place 2 bay leaves in each jar. Between them, distribute black and allspice pepper and garlic sliced into thin slices.

In a saucepan, mix the water, salt, and sugar. Put the saucepan on the heat and bring everything to a boil, then turn off the heat, pour in the vinegar, and stir.

Pour the prepared marinade over the lard in the jar, cover with a lid, and wait until it cools (preferably at room temperature), then store it in the refrigerator or cellar; the lard keeps for up to two months.
