Salo in Honey

Description

If you haven't tried making honey salo yet, I highly recommend it! The salo turns out tender, with a barely noticeable sweet honey flavor. On its own, it's neither too salty nor spicy—not like what we're used to. Before serving, you can cut it into pieces and sprinkle with salt or ground pepper to taste. Unusual, but delicious—definitely worth trying.

    Prepare all the ingredients from the list. You can choose the spices to your taste; I used thyme, basil, and coriander.

    Rinse the pork fatback, scrape the skin with a knife.

    Pour water into a small pot, add salt, sugar, peppercorns, and spices to taste. Bring to a boil and simmer for 5 minutes over medium heat.

    Remove the saucepan from the heat, immediately add the honey and bay leaf. Stir until the honey has dissolved.

    Place a piece of salo in the hot brine. Cover the pot with a lid and leave the salo in the brine until it has completely cooled.

    After the time has elapsed, remove the salo and pat it dry. Brush it on all sides with a small amount of honey (1 tsp will be enough).

    Wrap the salo in foil and refrigerate for 2 hours. If you like semi-frozen salo, you can later move it to the freezer for storage.
