Rinse the salo and cut it into small pieces.

Mix both types of pepper together with minced garlic, a little oil, and salt.

Line the bottom of the mold with cheesecloth. On top of it, arrange several sprigs of thyme, a bay leaf, rosemary, and sage. Rub the salo with the mixture from the previous step and place it on top. Also add more herb sprigs.

Wrap the salo in cheesecloth. Put it in the refrigerator for 3-4 days.

After that, shake off any salt and seasonings that have not been absorbed. Store the salo in foil in the freezer. Enjoy!
