
Salo in Onion Brine
Description
Pork fat cured in onion brine turns out tender, well salted, and fragrant. You can use pork fat with any amount of meat streaks. If there is little meat, add one more tablespoon of salt. You can add any spices you like to the brine. Serve the appetizer at the table.

Prepare all the necessary ingredients for making salo in onion skins.

Rinse the onion skins and place them in a pot. Add salt, sugar, a bay leaf, and allspice.

Pour water into a saucepan and place over medium heat. Bring to a boil and simmer the brine over low heat for 10 minutes.

Rinse the pork fat and place it in the brine. Cook the pork fat over low heat for 15–20 minutes. The pork fat should be completely covered with brine.

Turn off the heat and leave the salo in the brine for 12 hours. Remove the onion skins from the salo and let it dry.

Mince the garlic, mix it with black pepper, and rub the salo on all sides. Place it in a bag and leave it on the kitchen counter for 3–4 hours. After that, refrigerate it for 12 hours.
