
Salo in Onion Peels with Liquid Smoke
Description
Chilled boiled salo can be frozen if you did not manage to eat it all or prepared a large portion. To do this, wrap pieces of colorful salo in several bags or layers of plastic wrap, as it may share its aroma with neighboring foods. It can be served warm or chilled.

Prepare the listed ingredients. You can use lard with or without the meat layer.

Soak the onion skins in water for 10 minutes, then rinse thoroughly, washing off dirt and dust.

Place the onion skins in a saucepan, layer the lard on top, and add the bay leaves.

Add salt and ground black pepper. At this stage, you can also add other seasonings and spices.

Pour in the meat seasoning and add hot water. Add liquid smoke and boil the fatback for about 40–50 minutes. Make sure the foam does not boil over the sides of the pot.

Place the salo on a plate and refrigerate. Serve chilled.
